If you are worried about being able to use all of the potatoes before they go bad I would suggest freezing them.  Start by shredding them and then pressing them to squeeze out the excess water and pat them dry with a paper towel.  Then place individual servings into ziploc bags and freeze them.  I use these to make hash browns on the weekends.
